Corn-crusted Scallops with Homemade Tartar Sauce
Ingredients
- 1/2 cup Mayonnaise
- 2 tablespoon Sweet pickle finely chopped
- 1 tablespoon Capers chopped
- 2 teaspoon Fresh parsley chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon Lemon juice
- 1 dash Hot pepper sauce
- 1/8 teaspoon Salt to taste
- 1/8 teaspoon White pepper to taste
- 2 tablespoon Vegetable oil
- 3/4 cup Cornflake Crumbs
- 1/4 teaspoon Paprika
- 1/8 teaspoon Salt to taste
- 1/8 teaspoon Black pepper to taste
- 18 large Scallops
- 1/4 cup Mayonnaise
- 1 whole Lemon sliced for garnish
Instructions
- Combine the sauce ingredients in a bowl. Cover and store in the fridge until needed. Line a baking sheet with parchment paper. Brush the parchment with the vegetable oil.
- Preheat the oven to 425F. Place the cornflake crumbs. paprika. salt and pepper in medium bowl. Place the scallops and mayonnaise in a second bowl. Toss to thoroughly coat the scallops with mayonnaise. Coat a scallop in the cornflake crumb mixture. gently pressing the crumbs on to help them adhere. Set the coated scallop on the baking sheet; repeat with the remaining scallops.
- Bake the scallops for 5 minutes. then turn each one over and bake 5 minutes more.
- To serve. garnish with lemon slices. with tartar sauce alongside for dipping.
